Porridge: The nectarine bowl

Porridge is such a good way for getting a fuelling and healthy start to the day but I find it kinda boring and sludgy, so I've come up with a super easy but tasty recipe for a porridge bowl. I'm also planning on making this into a mini series, where I put up a load of different adaptations on the classic porridge - so let us know if you'd like to see more of these type of posts!

Sorry the fruit really doesn't look very appealing - it kinda accidentally squashed when I was cooking them!

What you'll need:

Rolled oats/porridge oats (I like to avoid the oats with added things like fruit in it as they add unnecessary sugars that don't even taste that good!)

Milk ( Any type like cow's milk, almond, soya, hazelnut, rice, coconut, etc)

1 Peach

Ground cinnamon

Coconut oil (for cooking/greasing pan)

How to make it:

1. Wash the nectarine then cut into medium to thin slices/wedges, removing the stone. Keep the skin on.

2. Put however many oats you want to eat in a microwaveable bowl. (I did 3tbsp oats to 6tbsp milk, then added loads more milk after it went into the microwave.)

3. Add the milk to the oats so that the milk just about covers the oats.

4. Put in the microwave for about 30 seconds.

5. Take the bowl out and mix the oat/milk mix - its important you keep doing this otherwise the oats on the top will get cooked and the bottom ones with just sit in the milk.

6. Put back in the microwave for another 30 seconds, then take out, mix and repeat this process till the oats are cooked. They should be soft and have absorbed most of the milk.

7. Between microwaving, whilst mixing, you could add more milk depending on how dry or thick the oats have become. For example I always add loads and loads more milk because I don't like to have stodgy, thick oats.

8. Whilst the porridge is in the microwave, put a frying pan on the hob and turn the heat up to medium-high.

9. Add about 1 tsp of coconut oil and cover the pan with it.

10. Once the oil is hot, add the nectarine slices and continuously move them around the pan to ensure they do not burn. (To test if the oil is hot you can add one nectarine slice and if it sizzles in the oil, its hot.)

11. Cook till the nectarines are slightly grilled on one side but not burnt, then turn the slices over and cook on the other side.

12. If all the nectarines don't fit into the pan then cook the rest now.

13. Once the oats are soft and cooked to your desired thickness, place the nectarine slices on top. When you cook the nectarine in the pan, it softens and then the juice kinda oozes out into the porridge, making it really sweet so I don't really find a need to add honey or anything!

14. Sprinkle some cinnamon on top for extra goodness!
